Pumpkin Muffins

INGREDIENTS:
¼ cup sunflower seed butter
¾ cup pumpkin puree
2 tablespoons flaxseed meal
¼ cup coconut flour
½ cup erythritol
½ teaspoon nutmeg, ground
1 teaspoon cinnamon, ground
½ teaspoon baking soda
1 egg
½ teaspoon baking powder
A pinch of salt
INSTRUCTIONS:
- In a bowl, mix butter with pumpkin puree and egg and blend well.
- Add flaxseed meal, coconut flour, erythritol, baking soda, baking powder,
nutmeg, cinnamon and a pinch of salt and stir well. - Spoon this into a greased muffin pan, introduce in the oven at 350
degrees F and bake for 15 minutes. - Leave muffins to cool down and serve them as a snack.
