Pumpkin Muffins

 

 

Preparation time: 10 minutes Cooking time: 15 minutes Servings: 18

INGREDIENTS:

¼ cup sunflower seed butter
¾ cup pumpkin puree
2 tablespoons flaxseed meal
¼ cup coconut flour
½ cup erythritol
½ teaspoon nutmeg, ground
1 teaspoon cinnamon, ground
½ teaspoon baking soda
1 egg
½ teaspoon baking powder
A pinch of salt

INSTRUCTIONS:

  1. In a bowl, mix butter with pumpkin puree and egg and blend well.
  2. Add flaxseed meal, coconut flour, erythritol, baking soda, baking powder,
    nutmeg, cinnamon and a pinch of salt and stir well.
  3. Spoon this into a greased muffin pan, introduce in the oven at 350
    degrees F and bake for 15 minutes.
  4. Leave muffins to cool down and serve them as a snack.
